Recipe- Peanut Butter Cake

Recipe:

2 & 1/4 c. Flour
2 c. brown sugar
1 c. peanut butter
1/2 c. butter (room temperature)
1 tsp. baking powder
1/2 tsp. baking soda
1 & 1/4 c. milk
2 tsp vanilla extract

3 eggs

Preheat your oven to 350 and grease and flour a 13 x 9 pan. In a large bowl, mix the first 4 ingredients with an electric mixer; blend at low speed until crumbly. Add the next 5 ingredients and blend at low speed until everything is wet, then beat at medium speed for 3 minutes.

Pour into prepared pan and bake, in the middle of your oven, for 35-40 minutes or until the toothpick test comes out clean.

Let the cake cool (in the pan) for 10 minutes, then spread the frosting on the hot cake (recipe follows) and sprinkle one cup of mini-chocolate chips over the frosting.

Peanut Butter Honey Frosting-

1 CUP PEANUT BUTTER 

4 TABLESPOONS RAW HONEY 

2 TEASPOON VANILLA EXTRACT 

4 CUPS POWDERED SUGAR 

8-9TABLESPOONS MILK

Warm the peanut butter and honey in the microwave just until it gets soft and easy to stir, then add everything else and beat until smooth. Spread over hot cake and sprinkle with one cup of mini-chocolate chips.

Baby Celebration for Teagan

So at first glance at the invitation, I thought... What is a baby celebration?? Why not just say shower?

Well I have this totally awesome friend who asked us NOT to bring gifts, but just prayers. And to come to celebrate the life growing inside her.  See, her baby was diagnosed with HLHS. Or an easy term, a broken heart. My friend wanted to chance to celebrate her baby, before... well, before the bad stuff comes.  But what I think she doesnt realize, is just how many of us are out there praying for her and baby Teagan. And our God, well... He is a miracle maker! So I am excited to see the plans he has for their family!

I wanted to share a few snap shots of this celebration, as we had a HOT   SWEATY   ATE LIKE A PIG GREAT time!

First off, I have to give a shout out to Faithful Cake Creations for making this astounding cake! I mean seriously, look at the little baby foot pushing out! How cute is this!!

We had a great time, with a few mishaps... Dakota hauled butt for the playground, without telling us, right after I took this pic:

Eli had a good time too, as usual. He ate a bunch and then went on the swings with some of our friends! He always looks so serious, but I swear he had fun! He cant wait to meet Teagan to see if they "hit it off"! Wink Wink!

Rainbow Cake!

So we came to the end of our Home Schooling week of weather and Noah's Ark.

We were supposed to make windsocks and rainbow cake on Friday, but I was a little under the weather... no pun intended...

So Saturday, come hell or high water, again no pun intended, ( ok maybe a little pun intended) we at least got to make our rainbow cake. I still did not get to the windsocks, as it is raining cats and dogs from Tropical Storm Debbie...

Maybe we will save those for another day...

Anywho, our cake experiment was awesome! Skylar and I did the whole thing ourselves and the boys reaped the benefits.. But it was a great lesson, not only for home making skills, but for her to learn math and deal with texture ( the Aspergers in her HATES texture!) She was able to dip her hand in the Crisco and spread it on the baking pan. She measured out the ingredients and because I dont have a 1 Cup measure she had to figure out how to make 1 1/4 cup water... She had to find 6 bowls and make the rainbow colors out of food coloring, then she had to mix each bowl until they were all mixed in.

We layered all the colors in order, gave the pan a shimmy shake, then crossed our fingers and hoped it worked.

End result?

It worked amazing, so much so, that I jumped for joy at how awesome it was!!

And then everyone enjoyed the cake...

Until my hubby mentioned that our poop may be rainbow colored! LOL!!
Only in my family!!
