Turkey, Ham and Mushroom - Oh My!

I have clearly been slacking this week! Or just havent had time, I am SO sorry!

Here are the meals I prepared for the rest of this week.
They were all hit EXCEPT - the mushroom linguine. Which, by the way, I was looking forward to the most! I was so sad! My husband and I managed to get it down, but the kids didnt even touch it. I take that back, they did try it, but made a face. Skylar even refused my offer of cookies to eat it! Geesh!

It probably would have been better with non-gluten free pasta, or more oil, or more cheese. Something. It just lacked flavor. And the citrus dressing was sooooo citrus-y. Ah well. Cant win them all!

Here are the photos combined into one post!
Enjoy!

Lemon Chicken and Tangerine Green Beans

Lemon Chicken and Tangerine Green Beans -
Does this kinda sound like a rock band to you?

Well whatever it was pretty good!
I LOVED the beans, but my kids hated them. Bummer.

I cheated and used minute brown rice, and its LIES all LIES - Minute? More like 15 minute! I could have used my rice steamer in the same amount of time. Lesson Learned.

Reminder we are using The Fresh 20 Meal Plans Gluten Free!!

Sausage Sautee - Recipe

Ingredients

  • 6 slices bacon
  • 4 potatoes - peeled and sliced thin
  • 1 can french cut green beans - or any veggie you prefer
  • 1/2 cup chopped celery
  • 2 carrots, chopped
  • 1 onion, chopped
  • 1 pound kielbasa sausage, cut into 1 inch pieces
  • salt and pepper to taste

Directions

  1. Chop Potatoes and slice carrots - boil until tender
  2. In a large, heavy skillet over medium high heat, fry the bacon until crisp, about 10 minutes. Remove the bacon and leave the fat in the skillet.
  3. Then place the potatoes, green beans, celery, carrots, and onion in the bacon fat, reduce heat to medium and saute for 5 minutes. Place the kielbasa over all, to allow the juices to trickle down over the vegetables.
  4. Saute for 5 to 10 more minutes, or to desired tenderness on the vegetables. Season with salt and pepper to taste, crumble the reserved bacon and return it to the skillet, and stir to combine.

You may also add garlic for some flavor while cooking...
