Potato Salad


Potato Salad




8 medium potatoes, cooked and diced
1 1/2 cups mayonnaise
2 tablespoons cider vinegar
3 tablespoons sugar
1 tablespoon yellow mustard
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon pepper
2 celery ribs, sliced
1 cup onion, minced
5 hard-boiled eggs
paprika
Directions:
1. Boil peeled potatoes in salted water until done. Cool to room temperature.
2.Place diced potatoes in large bowl.
3. Mix mayonnaise, cider vinegar, sugar, mustard, salt, garlic powder, and pepper in another bowl.
4. Add to potatoes.
5. Add celery and onions and mix well.
6. Stir in eggs.
7. Sprinkle a little paprika on top.

Chicken Tenders with Mashed potatoes and Peas



Hello!! Here is our dinner from last night.
It was supposed to be - Fish fingers with pureed peas..

So why does mine look nothing like that? Cuz it isnt.

I dont eat fish - so we did chicken tenders.
I didnt think my kids would eat green mashed potatoes so I didnt mash them together.

Same ingredients, just kept them seperated. And you know what? My kids had seconds! The potatoes were so good! The trick was fresh grated parm cheese!! MMMM...

And YES! It is gluten free!! We made our own bread crumbs out of gluten free multi grain bread - the kids love the food processor...

BBQ Braised Beef with Colcannon


Ok so I dont want to be a "Debby Downer" here... BUT

I am SO over cumin. I mean its like in EVERY recipe! Ok maybe that is an exageration but still. It has such a distinct taste and it had no business being in BBQ sauce. I KNEW the second I put it in there, I would regret it. UGH.

Rant over.

Dinner was good.
Not a huge fan of Colcannon... it was weird, and needed a lot of salt.

My kids on the other hand, hated them stringy meat and loved the colcannon. Too funny, huh?

Well all and all it was a good dinner. Not in my top ten. But I may possibly make it again MINUS the cumin. Cough. Gag.

I understand that there are only 20 ingredients allowed. I do! But its the same few spices every week! There are a plethora of spices out there!! And I know some chefs prefer certain spices! Thats awesome and stuff... But its time to broaden horizons. I am going to veer from the recipes if they continue this way.

Dont get me wrong, they are good, real good! But I do change em up slightly to my taste sometimes.
I still love the ease of having it all spelled out for me. I am NOT ungrateful. At all.

Just hoping for some new tastes.

Turkey, Ham and Mushroom - Oh My!



I have clearly been slacking this week! Or just havent had time, I am SO sorry!

Here are the meals I prepared for the rest of this week.
They were all hit EXCEPT - the mushroom linguine. Which, by the way, I was looking forward to the most! I was so sad! My husband and I managed to get it down, but the kids didnt even touch it. I take that back, they did try it, but made a face. Skylar even refused my offer of cookies to eat it! Geesh!

It probably would have been better with non-gluten free pasta, or more oil, or more cheese. Something. It just lacked flavor. And the citrus dressing was sooooo citrus-y. Ah well. Cant win them all!

Pizza Potatoes with Kale - Gluten Free


Fridays dinner I was REALLY looking forward to!

Anything to do with pizza and potatoes sounds like a hit for the whole family!
It didnt let us down.

Minus the fact that I burnt the kale - minus the fact that I didnt cook the potato all the way through. Hey, Im learning here!!

They were mighty tasty and Dakota gave them two thumbs up! He LOVED the potatoes!!

Week one, gluten free went pretty smoothly!
I am pretty happy about that for sure!

Peasant Bean Stew

So today is day three of the gluten free diet for us.
We are all so sick in this house, we have no voices, sore throats, fevers.
I was super excited that the plan was a stew today.

Peasant Stew to be exact.

And it was a hit. It was actually very very delicious. My daughters only complaint was the sausage - she ate the KALE!!!! What!! I know!

Recipe ~ Potato Soup

Potato Soup


Ingredients:

6 large potatoes
1 1/2 cup chopped celery,  (include leaves)

1 cup chopped onion
1/2 cup half-and-half or 1/2 cup cream

2 Cups of Diced Ham
2 Bay Leaves
1 Cup of Carrots
2 Cans of Chicken Broth

Stovetop Directions:

1 Peel and cube potatoes.

2 Put in a saucepan along with the onions and celery.


3 Add chicken broth, enough to just cover the vegetables.


4 Bring to a boil, lower heat, cover and simmer for 25 minutes, or until all of the vegetables are very tender.


5 Using a potato masher, coarsely crush the potatoes, but don't mash them--you want chunks left.


6 Add enough milk or cream to thin to desired thickness and add salt& pepper to taste.

Crock pot Directions:

1. Peel and cube potatoes

2. Put all ingredients in crock pot.

3. Cook for 5-8 hours.

4. Enjoy!

Ham and Squash Bake - Semi Home Made Recipe





Ingredients:

2 Cups Diced Ham
2 Medium Yellow Squash
2 Medium Zucchini
1 Box of Scalloped Potatoes
2 Tbs Real Butter
1/2 Cup Parmesan Cheese

Directions:

  1. Follow Directions on Box of Potatoes
  2. Before putting in oven, mix in ham...
  3. Layer Squash on top, I alternated the two for an aesthetic value...
  4. Melt Butter and drizzle over squash
  5. Shake cheese over top
  6. Bake as directed... I left mine in a bit longer for the cheese to brown on top

My family devoured this, so this will be a new regular in our home... My kids LOVE squash!

Recipe - Thanksgiving casserole




Ingredients

1 Lb Ground Turkey
1 Bag of shredded cheddar cheese
1 Can of Cream of Mushroom Soup
4 TBS Milk
1 Can of Green Beans
Tater Tots or Sweet Potato Fries ( I used both)

Directions:

1. Cook Turkey until no longer pink.
2. Add Cream of Mushroom Soup.
3. Transfer to a baking dish.
4. Layer Green Beans on top.
5. Layer Cheese on top of beans.
6 Arrange tots or fries on top of cheese.
7. Cook 30 Min on 350 degrees

My kids gave this two thumbs up!! Enjoy!!

Pork Chop Stew - Recipe



Ingredients:


6 pork loin chops
4 tbsp. flour
2 tbsp. oil
6 med. potatoes, cubed
1 med. onion, chopped
1 sm. cabbage, cut in thin wedges (optional)
4 carrots, diced
1 Cup Sliced Mushrooms
1/4 tsp. salt
1/2 tsp. pepper
2 tsp. chicken bouillon granules
1/4 c. water
1 can (14 1/2 oz.) sliced stewed tomatoes
1/2 c. sour cream
2 tbsp. cornstarch


Directions:




1. Trim fat from chops. Coat with 2 tablespoons flour. Brown chops in oil over medium heat.
2. Place potatoes, onion and carrots in slow cooker. Sprinkle remaining flour over and toss to coat. Layer over potato mixture, in order, cabbage, Mushrooms, salt, pepper, chops, bouillon, 1/4 cup water and stewed tomatoes with juice. Do Not Stir.
3. Cover and cook on high 3 1/2-4 hours or on low for 7-8 hours.
4. Optional: In small saucepan, stir sour cream and cornstarch until smooth. Measure cooking liquid and add enough water or milk to equal 1 1/2 cups. Stir into saucepan. Cook and stir over medium heat until thick and mixture comes to a boil. Serve with chops.

Sausage Sautee - Recipe




Ingredients

  • 6 slices bacon
  • 4 potatoes - peeled and sliced thin
  • 1 can french cut green beans - or any veggie you prefer
  • 1/2 cup chopped celery
  • 2 carrots, chopped
  • 1 onion, chopped
  • 1 pound kielbasa sausage, cut into 1 inch pieces
  • salt and pepper to taste


Directions

  1. Chop Potatoes and slice carrots - boil until tender
  2. In a large, heavy skillet over medium high heat, fry the bacon until crisp, about 10 minutes. Remove the bacon and leave the fat in the skillet.
  3. Then place the potatoes, green beans, celery, carrots, and onion in the bacon fat, reduce heat to medium and saute for 5 minutes. Place the kielbasa over all, to allow the juices to trickle down over the vegetables.
  4. Saute for 5 to 10 more minutes, or to desired tenderness on the vegetables. Season with salt and pepper to taste, crumble the reserved bacon and return it to the skillet, and stir to combine.

You may also add garlic for some flavor while cooking...
