Some sense of normalcy...






Today's post comes directly after a visit to my local grocery store for a gallon of milk....


You know you are overly emotional when: 


You are standing in the produce aisle and you spy across the way, standing at the deli counter, a man and his girlfriend. From far off, you can tell from behind, that the girlfriend has Down syndrome. He was hugging her around the waist and bossing her around. Ha! The man, having some sort of disability of his own, was also giving the deli guy a hard time - laughing and joking that he was slicing meat to slow and he was gonna tell his boss, etc etc. You are frozen watching this everyday 'normal' life style for them. 

You look like a stalker so you pretend to look at the lettuce.

You gather that the man works at this store and he is there shopping and joking around with the deli guy who appears to be his friend and coworker. His girlfriend pats the man on the butt and you giggle slightly embarrassed that you are still staring. 

You pick up a tomato to still not look like a stalker. 

You see the deli manager come over and the mans girlfriend runs full steam ahead to the manager and embraces her, with what may seem like the biggest hug this side of the planet. 

You feel your eyes well up. 

You hear the man say, 'Hey that's my lady there, easy!' 

The tears get worse and I know I have to move on to another aisle or I may just have picked up every piece of produce in the store. I couldn't help but look back one more time as I wiped a tear away from my eye. A very happy tear.

This is what I wish for my son. Normalcy. 

Two grown adults - shopping, caressing, joking with coworkers.
Yes. That is what I want him to have.
And I will do ALL in my power to make sure he succeeds in this. Because everyone deserves, love, friendship and a sense of pride.

And on a side note, we will now be having salad with our dinner.

Recipe: Chicken with Spinach and Tomato






Ingredients:

  • 8 to 12 ounces fresh chopped or baby spinach, cleaned
  • salt and pepper
  • 1/4 cup chicken broth
  • 4 chicken breast halves, boneless, pounded slightly to even thickness
  • 2 tsp Italian Seasoning
  • salt and pepper
  • 1 large tomato, diced
  • 1 onion chopped

Preparation:

Heat oven to 350°. Lightly grease a 9x13-inch baking dish or spray with cooking spray. Put spinach in the baking dish, sprinkle with salt and pepper. Add chicken broth. Sprinkle chicken with seasoning blend, salt, and pepper; arrange over the spinach. Sprinkle with the diced tomato and onion. Cover the baking dish with foil. Bake for 25 minutes. Uncover and bake for 10 to 15 minutes longer, or until chicken is cooked through.
Serves 4.

Recipe: Peach Moscato Pork Loin




Peach Moscato Pork Loin:


Pork Loin:
1/4 cup olive oil
1 tablespoon salt
2 teaspoons black pepper
1 heaping tablespoon poultry seasoning


Rub on loin. Place loin in oven for 30 minutes. Then start the peach sauce.
  
Peach Sauce:

2 cups of fresh peaches, peeled, pitted and chopped
1/2 cup white sugar
1/2 cup Moscato wine 
1 teaspoon salt
1/2 teaspoon freshly grated ginger 
1/2 teaspoon pepper
1 tablespoon of cornstarch diluted in a little bit of water

Bring the ingredients to a boil, then simmer for 15 minutes. Pull loin out of oven, and drizzle over the top. Place back in oven for an additional 15 minutes.


Serve!

Recipe: Bacon Wrapped Chicken

Ingredients

  • 1 lb skinless, boneless chicken breasts, cut into bite sizes pieces
  • 4 slices turkey bacon
  • 1/3 cup brown sugar
  • 1/2 tsp salt
  • 1 tbsp chili powder

Instructions

  1. Preheat oven to 375 degrees. Line a baking sheet with foil, and spray with cooking spray.
  2. Wrap bacon around each chicken fillet, and secure with a toothpick.
  3. In a small bowl, combine sugar, salt and chili powder. Roll the bacon wrapped chicken breast in the sugar mixture until thoroughly and evenly coated.
  4. Place on baking sheet and bake in oven for about 20-30 minutes or until chicken is cooked through and bacon is crisp.







Recipe: Brown Sugar

Who knew making your own brown sugar was so easy. I, literally, have had this on my shopping list for a month. But baking season is coming! I tried a few different recipes and this was my best concoction! Enjoy! 

Light brown sugar:
Combine 1 cup granulated sugar with 1 1/2 tablespoons molasses

Dark brown sugar: 
Combine 1 cup granulated sugar with 1/4 cup molasses

Recipe - Quiche ~ Bacon/Cheddar and Feta/Tomato




Quiche - Two ways

Bacon & Cheddar and Feta & Tomato


Feta Tomato Quiche:


2 tbsp Butter
1 Large Onion
1 Roma Tomato
1 package of Feta Cheese
4 Eggs
1/2 cup of milk
1 Pre-Made Pie Crust

Preheat oven to 350 degrees. Heat up frying pan, add butter. Cut up onion into slices, add to hot pan. Saute on Med heat until onions turn soft and translucent. Chop up tomato. Set onion aside to cool. Place pie crust into a pie pan and add cooled onion, tomato and feta to the bottom of crust, spreading out evenly. Beat 4 eggs and milk together and pour on top. Put in oven. Cook for 1 hour.

Cheddar Bacon Quiche:


1 Cup shredded Cheddar cheese
6 slices of Turkey Bacon
4 eggs
1/2 cup milk
1 Pre-Made pie crust

Preheat oven to 350 degrees. Chop up bacon into small pieces. Place pie crust into pie pan. Layer cheese and bacon on to crust evenly. Beat 4 eggs and milk in seperate bowl and pour over other ingredients. Put in oven and cook for one hour.

Home School ~ Week 2ish...


ABCJesusLovesMe  is where we get our curriculum...
Verse of the week:
John 14:6 - Jesus said to him, “I am the way, and the truth, and the life. No one comes to the Father except through me."

On day one we worked on our bible verse above. John 14:6


We then sang our song above, which happily the boys already knew. See above 
We then went into our dove printouts. Which we opted to put blue crepe paper (instead of tissue) because that's what we had on hand. We discussed the verse and ripped and crinkled and glued. 


After that we practiced writing numbers 0-5. 


I worked hand over hand with the orange crayon and allowed them to trace with the purple crayon. Huge improvements in this! I'm so proud! 


We then sat and read part of our bible section. Reviewed our flash cards and sight words to end our day. 

Day two:
Today we did our bible verse, sang our song and read our bible story. 
We then did our craft:
Making rain sticks. 

Craft:  Rain Sticks 
Tear off one sheet of aluminum foil that is three times as long as a paper towel tube.  Roll the foil lengthwise like a snake.  Wrap the foil around a wooden spoon creating a spring-like shape. Stretch the foil to be as wide and long as the tube.  Place the spring shaped foil into the paper towel tube.  Add a couple of layers of aluminum foil or construction paper to the bottom of the tube to secure the contents.  Secure tightly with a rubber band.  Add dry beans and/or dry macaroni to the fill the tube 1/10 of the way (make sure that the foil doesn't fall down when pouring in the beans or macaroni).  Add a matching cap to the top of the tube.  Decorate.  Teach the child to tilt the stick slowly.  (Source abcjesuslovesme.com)
I made them out of toilet paper rolls instead of paper towel tubes. 
The boys loved these, but the rice quickly founds its way out. 


Then we moved into the kitchen and did our science project: making it rain. 

 Fill a glass jar with 2" of very hot water. Place a plate over the jar.  Wait a few minutes for condensation to occur.  Then lay some ice cubes on the plate.  This will cause the condensation to rain!  (The condensation represents clouds.  The ice represents the cool air in the atmosphere that makes it rain.)  (Original Source Unknown)

The boys were so excited watching and wondering what in earth I was doing. When it actually started working they moved in for a closer look. I took this lesson further and taught about hot and cold as well. 


We sang "rain rain, go away" and the "Itsy Bitsy Spider" 


Day three: 

We studied about 9/11. My two youngest children were not born when this happened, but that doesnt make it any less significant.  We didnt delve into it too deeply but we prayed for the families who were effected and we did some coloring sheets....

and

We sang our song, "Jesus Loves Me"

And so ends week 2ish... 













Sunday donut antics

Sunday, I made the kids home made donuts. 
Skylar woke up late So i didn't get a shot of her :)) 

As I stirring and making them, Dakota stripped down to nothing and came running around the corner. 

These crazy kids!!





They came out great but were very messy!!!

Weekend water fun

Saturday, my mom took the kids to a water festival while I worked. 

She said it was kinda lame because there wasn't much the boys could do. 

So she did what any awesome Grammie would do! 

She made her own 'redneck' water park of course. 

The kids came home excited telling me all about it. They sat in buckets, played with hoses and scared each other with little lizards. 

All the fun I remember having at my moms with my little brothers. 

Funny how life comes full circle. 

Memories my kids will hold forever. 

Family matters!!!

My First 5K!


I have been doing my C25K training for 5 weeks now and as a birthday gift a few months ago I bought myself a 5K race.

The Wig Out Race....


It was supposed to be a fun water obstacle race. I thought, this is perfect for my first run. I get to stop every so often, and rest and do an obstacle...

I donned my awesome garb...





And we headed out!
We got there a little early and sat and drank some water... Hubs was there to cheer me on!


I headed out at 9:30 and ran my buns off, for like 5 minutes... then got to my first obstacle, running thru tires... Easy peasy, i got this!  I ran a few more minutes and came to a foam bath... Yes, this is getting fun... then ran a few inches and made it to the line of death. 30 minute wait in the blazing heat covered in dirty foam - waiting on a turn on the slip and slide... When I finally made it ( there was a person puking behind me) I ran and jumped into the biggest mud hole. YUK! But I kept on trucking on... I ran some more, and then the heat got me, so I walked a bit... then on the park benches there were bums, like 5 of them. One on each bench. Umm, time to run...

Made it back past the starting line, hubby waved and cheered me on...

Ran past him and down to the water station. Ew, Hot water... chucked that down. Opted to walk a bit more...

Ran around the corner to the next obstacle, inflatable horse races... I had no one with me so I just ran pat that one, down the road and around another corner, Water slides! Yay!  
Got there and was informed I had to remove shoes and socks... Umm no, have you seen my outfit, Im not peeling off my gear... 

So I had to skip all 5 of the slides. I was bummed.

Ran back to the finish line...
LAME!



I was disappointed. I walked more then I wanted to. I waited in line more then I wanted to, and I wanted more.

Oh well...
There are more in the future.

They did have free tacos and beer! 
(I had a stomach ache from these all night! LOL)

Home school Begins!



This year we have decided to try something slightly different. How long it will last, we don't know...
I am attempting to utilize the internet more and found ABCJesusLovesMe.com
This had some great FREE weekly plans...
And of course I will give them a mania twist.

But week one is here:
Age 5 Curriculum Week 1

We are using age 5, because it seemed most appropriate learning wise for Dakota. It is challenging enough and I can always add to it...

Day ONE we did God the Father lessons:

We read our first chapter in our Young Readers Bible - The Beginning

We started with the Bible verse:
This is also written on our portable white board so I can show them what I am reading.

Verse:  I John 3:1 - How great is the love the Father has lavished on us, that we should be called children of God! And that is what we are!




Then we did the song:

Bible Song: Trinity Song
 Tune: "Are you Sleeping?"
God the Father, God the Father
God the Son, God the Son
God the Holy Spirit, God the Holy Spirit
Three in One, Three in One.

Which they mastered by the end of the day....

We then did our Shamrock printable:

We then worked on our Weather Items for the day, I chose clouds...

We discussed that clouds are fluffy and light just like cotton balls. Then we glued the cotton balls onto blue paper...


We then used food coloring an water to make blue paint.
And I drew on the white paper with white crayon, some clouds. I asked the kids if they could see the clouds, they said no and were quite confused. Then I gave them a fluffy cotton ball and showed them how to dip it in the paint and find the clouds. They loved this, and I was not quite prepared for the mess... Oops!


We then sang our song again (see above) while we were painting and we discussed our verse again.

After we washed our hands I was finished with my lesson, but the boys ran back to the table for more! Well who am I to argue! So we worked on some sight word flash cards and some puzzles.

After all that it was time for lunch.

And we ended our school Day one...


Day two:


On Day two we re-read our bible verse, and resang our song.
We read a new chapter in our Young Readers Bible - God created Eve

We began with working on our writing. The first three I's are hand over hand, the rest are Dakota's! Isnt he doing great!



We then worked more on the weather, today being the Sun! We finger painted sun circles between wax paper, then we used Q-Tips to make the sun flares!


We then went out side and did the Put The Fire Out activity. This is an awesome Gross Motor Skill! & was their favorite of the day! After this we played more with water and chalk... then went in for lunch... So ends day 2!



Day 3

We did a lot of flash cards and tracing. Nothing worthy of photographing. 

We did discuss being children of God and the boys drew pictures of themselves...

We spread week one into two weeks only because life got in the way a bit... 
But we have next weeks plans all ready to go! 
We will be continuing weather and the trinity...
