Mediterranean Chicken with couscous salad

Well we have the funk in our house - Dakota got it Monday and Eli and I got it last night. Strep throat. UGH.

And I did NOT feel like cooking. But I didn't marinade that chicken for nothing, ya heard?

So I went thru with it. I cooked it up and I ate the dickens out of it! And it was darn tooting delicious! SO take that Mr. Strep!

By the way this one was NOT gluten free - because my local shop didnt have gluten free couscous - s I splurged and bought the rainbow - cuz it was cute. YES, because it was cute!

So here is our photo:

And as always - the recipes we use are from The Fresh 20

I do NOT get paid to endorse them in any way - just sharing :)

Although I wish I did get paid - Hey - Fresh 20 - You hear that??

Chicken Tenders with Mashed potatoes and Peas

Hello!! Here is our dinner from last night.
It was supposed to be - Fish fingers with pureed peas..

So why does mine look nothing like that? Cuz it isnt.

I dont eat fish - so we did chicken tenders.
I didnt think my kids would eat green mashed potatoes so I didnt mash them together.

Same ingredients, just kept them seperated. And you know what? My kids had seconds! The potatoes were so good! The trick was fresh grated parm cheese!! MMMM...

And YES! It is gluten free!! We made our own bread crumbs out of gluten free multi grain bread - the kids love the food processor...

Here is our photo!

Chicken!

This week, I ran out of grocery money so I have been having to improvise!
Day one was a Chicken Milanese - Which I had everything for!
Here is that meal! It was so good!!

And today was supposed to be Shrimp Scampi, but I didnt have the items for that so I move don to Wednesday - which I had everything for, but it was so similar to yesterdays, I changed it up a bit - it called for rice, but I opted to use noodles - and it is def not gluten free as I didnt have the right noodles...

It was a Chicken Broccoli Casserole and it was GOOOOOD!!!
Here is a photo of that...

Yummmm!

They were mighty tasty and Dakota gave them two thumbs up! He LOVED the potatoes!!

Week one, gluten free went pretty smoothly!
I am pretty happy about that for sure!

Here is our obligatory photo for your drooling pleasure!
