Recipe: Spanish Rice - Gluten Free and Vegetarian


Right before I added the rice.

Before I mixed it together, isnt it pretty!!



Ingredients:

2 Green Peppers - Optional Red, Yellow or Orange Peppers...
1 Yellow Onion
2 Tsp Olive Oil
1 Can of Corn ( You can use frozen or fresh)
1 Can of Black Beans
1 Can of Diced tomatoes
1 Can of Rotel Diced tomatoes
2 Tsp Cumin
2 Tsp Garlic Salt
1 Tsp Paprika
1 Tsp Mild Chili Powder
4 Cups cooked rice... ( I steamed mine in the steamer while cooking the rest..)
1 package of mexican cheese


Directions:

  1. In large saute pan on medium high heat, add Olive Oil... 
  2. When oil is hot add peppers and onions. Saute until soft.
  3. Add Tomatoes, beans, corn and all spices...
  4. Mix together and reduce heat to simmer...
  5. Simmer 10 - 15 minutes just to warm through.
  6. Fold in rice. Place in serving dish.
  7. Layer cheese on top.
  8. Serve hot or room temp...
