| Before I mixed it together, isnt it pretty!! |
Ingredients:
2 Green Peppers - Optional Red, Yellow or Orange Peppers...
1 Yellow Onion
2 Tsp Olive Oil
1 Can of Corn ( You can use frozen or fresh)
1 Can of Black Beans
1 Can of Diced tomatoes
1 Can of Rotel Diced tomatoes
2 Tsp Cumin
2 Tsp Garlic Salt
1 Tsp Paprika
1 Tsp Mild Chili Powder
4 Cups cooked rice... ( I steamed mine in the steamer while cooking the rest..)
1 package of mexican cheese
Directions:
- In large saute pan on medium high heat, add Olive Oil...
- When oil is hot add peppers and onions. Saute until soft.
- Add Tomatoes, beans, corn and all spices...
- Mix together and reduce heat to simmer...
- Simmer 10 - 15 minutes just to warm through.
- Fold in rice. Place in serving dish.
- Layer cheese on top.
- Serve hot or room temp...
